Taste

In Comelico, taste comes from a real mountain: essential flavors, local products, traditional recipes and a cuisine that tells the deep bond between territory and community.

Discovering Comelico also means tasting it. Here, mountain cuisine preserves a direct relationship with the territory, the seasons and the Ladin tradition. Taste must become part of the journey and a concrete way to enter the identity of the valley.

Cheeses and organic products

All the pastures of Val Comelico are part of a certified organic district: milk and cheeses are entirely organic, produced with attention to raw materials and sustainability.

Comelico cheese changes smell and taste depending on the season and the feeding of the animals. The Km 0 Circuit promotes local productions and cooperation between producers in the supply chain.

Beer, honey and biscuits

In addition to cheeses, the territory holds other surprises. The beer of the brewery “L’Artigianale il Grillo” has won numerous competitions and is known throughout the region.

The honey produced in the valley bears the Miele delle Dolomiti Bellunesi DOP certification, and some local producers have been recognized among the best in Italy. Finally, the Sartorelli biscuits: of ancient production, in the past they have achieved a fame that few expect — they were served in the restaurant car of the Orient Express.

Traditional dishes

The most representative dish of Comelico is the casunziel: a half-moon ravioli made of soft wheat flour, typical of the Ladin territories. The comelicense version is stuffed with potatoes and sauerkraut or mint grass, a combination that tells centuries of valley cuisine.

The Eicher Bakery in Costalta still prepares them with the traditional recipe, in 18 varieties of filling. Alongside the casunziei, the comelicense table offers kneili, mos, roe deer pastin, barley soup and beef pulp pendulums.
